Morning! I’m blogging right now while sipping coffee and slurping up a big pumpkin smoothie bowl with sliced apples, walnuts, chia seeds, and cinnamon sprinkled on top. It’s to die for.

I have today off from work, but I was up and at em this morning to teach a total body conditioning class at 8am and then lift. I’m excited to have the day ahead of me to get caught up, run some errands, and relax. But first, a little weekend recap for you!

I started the weekend by subbing for the 5pm cycling class at the Y. My goal with indoor cycling is to sub as many classes as I can to get more experienced with it, and then hopefully land a steady cycling class sometime in the near future.

After spin, it was time for friends! Slesh and Will came over to hang out, and Tim and I put together this homemade charcuterie board for us to snack on until dinner was ready. I am recently obsessed with making charcuterie or snack boards. Anyone else?

For dinner, we served a roasted chicken with homemade gravy and roasted veggies (purple carrots, brussels sprouts, and radishes). Slesh brought a yummy harvest salad.

I think our drinks were all over the map that night. There was some dry rose, some red wine, pumpkin beers, and Slesh made pumpkin stormys. I stuck to the rose during dinner and UFO pumpkins the rest of the night. We had a great time with our friends catching about the last two weeks, recapping our wedding, and sharing stories from our honeymoon.

Saturday morning started out with a strength workout, followed by a breakfast of scrambled eggs and plain Greek yogurt with some toasted almonds and unsweetened coconut mixed in.

And then it was time for some fall fun! Tim and I had a great day apple picking at Shelburne Farms in Stow. We’ve gone every year together since we first started dating six years ago, and it’s our favorite fall tradition.

After we were done picking our apples, we browsed in the apple shop for a little bit. We ended up buying three small pumpkins for our apartment and a gallon of cider.

We also split an apple cider donut!

On the way home, we stopped in Concord center to walk around a little bit and grab a quick bite to eat. We stopped at Main Streets Cafe, a super cute place to grab a sandwich, soup, salad, or burger. We decided to each order a beer and a cup of soup. I got a Shipyard Pumpkin with a cup of the beef and butternut chili, and Tim opted for the Baxter IPA with a cup of clam chowder. We also split a turkey and brie grilled cheese with fig spread on sourdough.

This meal held us over for the rest of the night, which was spent on the couch finishing season four of 24.

Sunday was our off day from the gym, so we had a relaxing morning at home. After getting out of bed, we put our apples to good use. We made grain free waffles and topped them with a caramelized apple syrup. So freaking yummy!

After breakfast, I got caught up on some things around the house before Tim and I headed to Jeff and Jill’s house to watch the game. Our other friends Cate and Joe and Pete and Andrea were there, and we had a great day with everyone. We brought homemade buffalo cauliflower bites (perfect healthy snack for game days) and a batch of these grain free pumpkin bars with pecans.

I had made a batch of these for Friday night too, and they were gobbled right up both times!

  1. We make charcuterie boards (although in our house we call it a picky plate) for dinner pretty often. When I know we want dinner in front of the tv I’ll chop up a ton of veggies and fruit, some cheese and meat and serve it with hummus and pita or other bread.

    • So fun, Kristen! I see a lot more in our future, for sure. Especially now that we have all these new trays, boards, and serving platters from our bridal shower. 🙂
